Pecan Pie Chickpea Granola

This homemade granola is a cleaner alternative to most store-bought options. It uses chickpea-based oats as the base, which provide more protein and fiber than traditional oats, with a mix of healthy fats from almonds, pecans, and seeds.
Ingredients:

1/4 cup almond butter (natural, unsweetened)

2 tbsp honey

2 tbsp melted coconut oil

Splash of vanilla extract

1 cup ChiChi Maple Brown Sugar

1/2 tsp cinnamon

1/4 tsp pumpkin spice

Handful of pumpkin seeds

Handful of chopped pecans

Some chopped almonds
Instructions:

Preheat oven to 170°C / 340°F.

In a bowl, whisk almond butter, honey, melted coconut oil, and vanilla until smooth.

Stir in chickpea oats, cinnamon, pumpkin spice, pumpkin seeds, pecans, and almonds.

Spread mixture on a parchment-lined baking tray.

Bake for 15–18 minutes, stirring halfway. Watch carefully to avoid burning.
