Healthy Special K Bars

These no-bake Special K bars are reimagined with Maple ChiChi, our high-protein chickpea hot cereal, for a snack that’s just as nostalgic—but way more nutritious. They’re sweet, salty, chewy, and loaded with whole ingredients you can feel good about. Perfect for back-to-school meal prep, office snacking, or satisfying a late-night craving without the sugar crash.
Ingredients
- 1/3 cup dry Maple ChiChi (makes ~1 cup cooked)
- 1 cup Special K cereal
- 1/4 cup peanut butter
- 1/4 cup maple syrup
- 1/2 tsp vanilla extract
- Pinch of salt
- 1/4 cup mini chocolate chips
- Flaky sea salt, to finish
Instructions
- Cook ChiChi thick and let cool completely.
- In a large bowl, combine cooled ChiChi and Special K cereal.
- In a separate bowl, whisk together peanut butter, maple syrup, vanilla, and salt until smooth.
- Pour over the cereal mixture and stir until fully coated.
- Press mixture into a parchment-lined pan to form bars.
- Top with mini chocolate chips and a sprinkle of flaky sea salt.
- Chill for 1–2 hours until set. Slice and enjoy!

Tips for Perfect No-Bake Special K Bars:
