Healthy Special K Bars


Looking for a healthy twist on those gooey Special K bars from your childhood? These no-bake Special K bars are reimagined with Maple ChiChi, our high-protein chickpea hot cereal, for a snack that’s just as nostalgic—but way more nutritious. They’re sweet, salty, chewy, and loaded with whole ingredients you can feel good about. Perfect for back-to-school meal prep, office snacking, or satisfying a late-night craving without the sugar crash.


Ingredients

  • 1/3 cup dry Maple ChiChi (makes ~1 cup cooked)
  • 1 cup Special K cereal
  • 1/4 cup peanut butter
  • 1/4 cup maple syrup
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • 1/4 cup mini chocolate chips
  • Flaky sea salt, to finish

Instructions

  1. Cook ChiChi thick and let cool completely.
  2. In a large bowl, combine cooled ChiChi and Special K cereal.
  3. In a separate bowl, whisk together peanut butter, maple syrup, vanilla, and salt until smooth.
  4. Pour over the cereal mixture and stir until fully coated.
  5. Press mixture into a parchment-lined pan to form bars.
  6. Top with mini chocolate chips and a sprinkle of flaky sea salt.
  7. Chill for 1–2 hours until set. Slice and enjoy!

Tips for Perfect No-Bake Special K Bars:

Want them extra chewy? Add a tablespoon more maple syrup. For a nut-free version, use sunflower seed butter. Store in the fridge for up to a week—or freeze for longer!
