Banana ChiChi Pancakes


The stovetop option for when you want something hot off the pan instead of out of the air fryer. Just banana, eggs, and ChiChi whisked into a batter, with cinnamon and vanilla doing the flavor work. No flour, no sugar, and they come out golden and fluffy with enough protein and fiber to hold you through the morning.


Ingredients

  • 1 banana
  • 2 eggs
  • 1/2 cup ChiChi
  • Cinnamon
  • Splash of vanilla
  • Coconut oil (for the pan)

Instructions

  1. Mash the banana in a bowl.
  2. Whisk in the eggs, cinnamon, and vanilla.
  3. Stir in the ChiChi until combined.
  4. Heat a pan on medium-low and prep with coconut oil.
  5. Pour small pancakes onto the pan and cook until golden on both sides.

Toppings ideas

  • Maple Syrup, Whipped Cream, Berries, Sliced Banana, Powdered Sugar, Honey, Yogurt, etc!

Tip

blend the ChiChi into a flour first for a smoother, more traditional pancake texture.
