Apple & Persimmon Protein Pancakes

A cozy, high-protein twist on pancakes using Apple Cinnamon ChiChi. Sweet persimmons bring a seasonal pop, but you can swap in any dried fruit you have on hand.

Ingredients

  • 1/3 cup Apple Cinnamon ChiChi
  • 1 egg
  • 2 tbsp Greek yogurt (plain or vanilla)
  • 1/2 tsp baking powder
  • 2 tbsp chopped dried persimmon rind (or sub with dried apples, apricots, or any fruit)
  • Butter or oil, for cooking

Toppings

  • Fresh persimmon slices (or your favorite fruit)
  • Maple syrup or honey (optional)

Instructions

  1. In a small bowl, whisk together the egg, Greek yogurt, and baking powder until smooth.
  2. Stir in the Apple Cinnamon ChiChi and chopped dried persimmon rind until well combined. The batter will be thick.
  3. Heat a nonstick pan over medium heat and lightly butter or oil the surface.
  4. Pour the batter into the pan, forming small pancakes (about 2–3). Cook until golden on one side, then flip and cook through on the other side (2–3 minutes per side).
  5. Serve warm, topped with fresh persimmon slices (or any fruit you love) and a drizzle of maple syrup.
