Apple & Persimmon Protein Pancakes
A cozy, high-protein twist on pancakes using Apple Cinnamon ChiChi. Sweet persimmons bring a seasonal pop, but you can swap in any dried fruit you have on hand.
Ingredients
- 1/3 cup Apple Cinnamon ChiChi
- 1 egg
- 2 tbsp Greek yogurt (plain or vanilla)
- 1/2 tsp baking powder
- 2 tbsp chopped dried persimmon rind (or sub with dried apples, apricots, or any fruit)
- Butter or oil, for cooking
Toppings
- Fresh persimmon slices (or your favorite fruit)
- Maple syrup or honey (optional)
Instructions
- In a small bowl, whisk together the egg, Greek yogurt, and baking powder until smooth.
- Stir in the Apple Cinnamon ChiChi and chopped dried persimmon rind until well combined. The batter will be thick.
- Heat a nonstick pan over medium heat and lightly butter or oil the surface.
- Pour the batter into the pan, forming small pancakes (about 2–3). Cook until golden on one side, then flip and cook through on the other side (2–3 minutes per side).
- Serve warm, topped with fresh persimmon slices (or any fruit you love) and a drizzle of maple syrup.
