Vegan Peppermint Brownies


Add a festive touch to your dessert table with these fudgy peppermint brownies! Made with ChiChi's chickpea hot cereal and flax meal, they’re a deliciously wholesome treat that’s perfect for the holiday season.


Ingredients

  • 1/2 cup milk
  • 3 tablespoons flax meal
  • 1 teaspoon vanilla extract
  • 3/4 cup coconut sugar (or packed light brown sugar)
  • 1/3 cup oil
  • 2/3 cup (78 g) unsweetened cocoa powder
  • 2/3 cup ChiChi
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 candy cane, crushed

Instructions

  1. Prepare the Flax Mixture: In a small bowl, mix the milk, vanilla, and flax meal. Let it sit for 5 minutes to thicken.
  2. Mix the Batter: In a large bowl, combine the flax mixture with the coconut sugar, oil, cocoa powder, ChiChi, baking powder, and salt. Stir until the batter is smooth and well combined.
  3. Assemble: Pour the batter into an 8-inch baking pan, spreading it evenly. Sprinkle the crushed candy cane on top.
  4. Bake: Bake at 325°F for 20–25 minutes, or until the brownies are set and a toothpick inserted in the center comes out clean.
  5. Cool and Serve: Allow the brownies to cool completely before slicing.
