Sticky Date Baked ChiChi
All the gooey, caramel-y comfort of sticky toffee pudding without the sugar crash that usually follows. Softened dates blend into the base for natural sweetness, cinnamon warms it up, and a quick peanut butter and maple drizzle soaks in while it cools. Between the dates and the chickpea base, it's got enough fiber to actually count as breakfast instead of pretending to.
Ingredients
- 5 dates
- Water (for softening)
- 1/3 cup blended ChiChi
- 1/3 cup regular ChiChi
- 1/3 cup milk
- Cinnamon
Instructions
- Microwave the dates with a bit of water for 30 seconds, then mash.
- Mix in both types of ChiChi, milk, and cinnamon.
- Transfer to a dish, cover with foil, and air fry at 450°F for 20 minutes.
- Mix the topping ingredients until smooth, pour over the baked ChiChi, and let it absorb.
- Finish with berries.
