Ingredients

2 cups Apple Cinnamon ChiChi (~220 g)

1 large apple, peeled and grated (~1 cup packed)

½ cup milk of choice (plant-based)

½ cup almond butter (or any nut/seed butter)

⅓ cup maple syrup

1 tsp vanilla extract

1 tsp cinnamon
-
½ tsp baking powder
-
¼ tsp salt

Optional: ½ cup diced apple + ¼ cup chopped walnuts or pecans
Instructions

Preheat oven to 350°F (175°C) and line an 8x8 pan with parchment.

In a large bowl, stir together grated apple, plant milk, almond butter, maple syrup, and vanilla.

Add ChiChi, cinnamon, baking powder, and salt. Mix well.

Fold in diced apple and/or nuts if using.

Press mixture firmly into pan.

Bake 25–30 minutes, until the top is golden and set.

Cool completely, slice into bars, and enjoy!
Storage

Store in an airtight container at room temperature for 2 days or in the fridge up to 5 days.
