Chichi Coconut Clusters
Crunchy coconut clusters with almonds, cashews, and chickpea cereal, baked in maple syrup and finished with a dark chocolate drizzle and a pinch of sea salt. Like granola bites, but better.
Ingredients
- 1 cup chopped/sliced almonds
- 2/3 cup cashews
- 1/2 cup unsweetened shaved coconut
- 2 tbsp Chichi
- 1/3 cup pure maple syrup
- 2 tsp coconut oil, melted
- Dark chocolate, melted
- Pinch of sea salt
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with baking cups
- In a large bowl, mix almonds, cashews, shaved coconut, and Chichi
- In a separate bowl, whisk together maple syrup and melted coconut oil
- Pour wet mixture over dry ingredients and stir until everything is evenly coated and sticky
- Scoop small clusters into baking cups
- Bake for 18–22 minutes until golden and fragrant
- Let cool completely on the tray so they firm up
- Drizzle melted chocolate over the cooled clusters and sprinkle sea salt
- Let the chocolate set before serving and enjoy!
