Cheddar & Chive Breakfast Bowls

A cozy, savory twist on your morning ChiChi — creamy, cheesy, and packed with protein. Perfect for brunch or a comforting weekday breakfast.

Ingredients (serves 1)

  • 1 tbsp olive oil

  • 3–4 mushrooms, thinly sliced

  • 1 clove garlic, minced

  • 1 egg

  • 1 cup milk (any kind)

  • ⅓ cup Original ChiChi

  • Salt, to taste

  • Freshly grated cheddar cheese (to your heart’s desire)

  • Fresh chives, finely chopped


Instructions

  1. Prep the veggies – Slice the mushrooms and finely chop the chives.

  2. Sauté the mushrooms – Heat olive oil in a pan over medium heat. Add mushrooms and cook until lightly browned. Add minced garlic and sauté for another 30 seconds. Remove from pan and set aside.

  3. Cook the egg – In the same pan, fry an egg over-easy (or however you like it).

  4. Cook the ChiChi – In a small saucepan, heat 1 cup of milk with a pinch of salt. Once warm, whisk in ⅓ cup ChiChi and cook until thick and creamy, stirring frequently.

  5. Add the cheese – Grate in cheddar cheese to taste and stir until melted and smooth.

  6. Assemble the bowl – Spoon cheesy ChiChi into a bowl, top with the fried egg, sautéed mushrooms, and sprinkle with chives.

  7. Enjoy! Creamy, savory, and so satisfying.
