Cheddar & Chive Breakfast Bowls
A cozy, savory twist on your morning ChiChi — creamy, cheesy, and packed with protein. Perfect for brunch or a comforting weekday breakfast.
Ingredients (serves 1)

1 tbsp olive oil

3–4 mushrooms, thinly sliced

1 clove garlic, minced

1 egg

1 cup milk (any kind)

⅓ cup Original ChiChi

Salt, to taste

Freshly grated cheddar cheese (to your heart’s desire)

Fresh chives, finely chopped
Instructions

Prep the veggies – Slice the mushrooms and finely chop the chives.

Sauté the mushrooms – Heat olive oil in a pan over medium heat. Add mushrooms and cook until lightly browned. Add minced garlic and sauté for another 30 seconds. Remove from pan and set aside.

Cook the egg – In the same pan, fry an egg over-easy (or however you like it).

Cook the ChiChi – In a small saucepan, heat 1 cup of milk with a pinch of salt. Once warm, whisk in ⅓ cup ChiChi and cook until thick and creamy, stirring frequently.

Add the cheese – Grate in cheddar cheese to taste and stir until melted and smooth.

Assemble the bowl – Spoon cheesy ChiChi into a bowl, top with the fried egg, sautéed mushrooms, and sprinkle with chives.
