Cheddar & Chive Breakfast Bowls
A cozy, savory twist on your morning ChiChi — creamy, cheesy, and packed with protein. Perfect for brunch or a comforting weekday breakfast.
Ingredients
- 1 tbsp olive oil
- 3–4 mushrooms, thinly sliced
- 1 clove garlic, minced
- 1 egg
- 1 cup milk (any kind)
- ⅓ cup Original ChiChi
- Salt, to taste
- Freshly grated cheddar cheese (to your heart’s desire)
- Fresh chives, finely chopped
Instructions
- Prep the veggies – Slice the mushrooms and finely chop the chives.
- Sauté the mushrooms – Heat olive oil in a pan over medium heat. Add mushrooms and cook until lightly browned. Add minced garlic and sauté for another 30 seconds. Remove from pan and set aside.
- Cook the egg – In the same pan, fry an egg over-easy (or however you like it).
- Cook the ChiChi – In a small saucepan, heat 1 cup of milk with a pinch of salt. Once warm, whisk in ⅓ cup ChiChi and cook until thick and creamy, stirring frequently.
- Add the cheese – Grate in cheddar cheese to taste and stir until melted and smooth.
- Assemble the bowl – Spoon cheesy ChiChi into a bowl, top with the fried egg, sautéed mushrooms, and sprinkle with chives.
