Ingredients

  • 1/2 cup milk (dairy or non-dairy)
  • 2 eggs
  • 1/4 cup applesauce
  • 1 tsp baking powder
  • Pinch of salt
  • 2 1/2 cups ChiChi Original chickpea oatmeal
  • 1/2 cup chopped fresh strawberries
  • 3 tbsp strawberry preserves

Instructions

  1. Preheat Your Oven: Set your oven to 375°F (190°C) and lightly grease an 8x8-inch baking dish or line it with parchment paper for easy removal.
  2. Mix the Wet Ingredients: In a large mixing bowl, whisk together the milk, eggs, applesauce, baking powder, and a pinch of salt until well combined.
  3. Combine with ChiChi: Stir in the ChiChi Original chickpea oatmeal until fully incorporated, then fold in the chopped strawberries and strawberry preserves. Mix gently to ensure the strawberries are evenly distributed throughout the batter.
  4. Bake: Pour the batter into the prepared baking dish, spreading it out evenly. Bake in the preheated oven for 35 minutes or until the bars are golden brown and a toothpick inserted in the center comes out clean.
  5. Cool and Serve: Let the bars cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely. Once cooled, cut them into squares and enjoy!
