Peanut Butter Chip Protein Cookies
What if your morning cereal could also become dessert? Turns out, our new Peanut Butter Chip flavor makes ridiculously good cookies—and they come together in about 15 minutes. These are soft, chewy, and packed with protein thanks to the chickpea base. No flour, no oats, just simple pantry ingredients you probably already have.
Ingredients
- 1¼ cup Peanut Butter Chip ChiChi Hot Cereal
- 2 tbsp sweetener of choice (sugar, honey, maple, anything!)
- ½ tsp baking powder
- 2 tbsp peanut butter
- 1 egg
- ¼ cup almond milk
- Mini chocolate chips
Instructions
- Mix the dry ingredients together, then add the peanut butter and egg.
- Slowly pour in almond milk until you get a soft cookie dough (not runny—this is key).
- Fold in chocolate chips, scoop onto a lined baking tray
- Bake at 350°F for 10-12 minutes. You want the edges set but the centers still soft.
That's it. Six to eight cookies with around 10g of protein from the ChiChi mix, and they actually taste like cookies—not health food pretending to be cookies.
