Chocolate Covered Banana Bites


Bite-sized goodness.


Ingredients

  • 1/4 cup Banana Bread ChiChi
  • 1/2 cup water or plant-based milk
  • 1 tablespoon peanut butter
  • 1/4 cup vegan chocolate chips
  • 1 teaspoon coconut oil
  • Ripe bananas, sliced

Instructions

  1. Prepare the Banana Bread ChiChi Mixture: In a bowl, cook the Banana Bread ChiChi with your liquid of choice and then stir in your peanut butter until well combined. Set aside.
  2. Slice the banana and prep your chocolate: Peel the ripe banana and cut it into slices, about 1/2 inch thick. In a microwave-safe bowl, combine the chocolate chips and coconut oil and microwave in 30-second intervals, stirring in between, until melted and smooth.
  3. Assemble the Banana Bites:
  4. Line a baking sheet with parchment paper.
  5. Using a spoon, place a dollop of melted chocolate onto the parchment paper.
  6. Top each chocolate dollop with a banana slice.
  7. Spoon a small amount of the ChiChi mixture on top of each banana slice.
  8. Drizzle more melted chocolate over the ChiChi mixture to cover it completely.
  9. Freeze and Enjoy: Place the baking sheet in the freezer for about 10 minutes, or until the chocolate hardens. Then serve and enjoy!
